Engine oil grade?

What is the consensus on the correct grade of engine oil?

The exxy manual says 15W40 however I know a lot run on 10W40?

Is there any real difference for the exxy?

Id like a note on this as well,
I have been runing the rebuilt engine in on piston ezze its been ran but not done many miles over the last 12 months!
what is the best engine oil to use next?
